The new menu refresh is rooted in Chef Cheung’s culinary journey, inspired by his childhood, travels, and diverse professional experiences across continents. It also emphasizes inclusivity, offering multiple allergen-friendly, gluten-free, and vegetarian options.

  • Umami Koji Tomato Burrata: A summer-forward vegetarian dish highlighting koji-fermented, lacto-fermented, and dehydrated tomatoes served with basil oil and tomato jus.

  • Dibba Bay #2 Oysters: A fermentation-focused reimagining of Bangkok’s iconic seafood sauce, using local chilies and aromatics.

  • Street Shu Mai: A nostalgic take on Hong Kong street dumplings, featuring chicken and prawn shumai over sticky rice with hoisin-chili crunch and a touch of tahini.
